Yesterday was day fifteen of our Whole30 challenge, heyooo! We are officially at the half way mark! We did keep our will power strong through some challenges, see National Ice Cream Day. I mean, really? That had to fall during this thirty days. It broke my heart a little. Ok, a lot. Let me wipe my tears so we can continue on. Here we go with a week two update! Eating clean while you’re away from home actually isn’t as hard as it seems. All we did was google grass fed beef and the city we were in. There are actually a lot of places that serve compliant beef! Win. We are starting to, not only feel but now, see the changes happening in our bodies and that is extremely exciting. It is such a good feeling when you know how hard you’ve been working, sticking committed to an extremely strict regimen. Also, my autoimmune disease does seem to actually feel a bit better. I haven’t been stiff at all, despite the rain storm we had here in southern California; however, I do know that now heading into week three it does take a while to completely cleanse our bodies of all the nasty stuff. I’m hoping to be able to feel a significant change by day thirty.
As for weeks three and four, I am going to really try and be more consistent about exercise in order to get the most out of this challenge, as well as, my body. I’ll be honest, taking care of an 11 month old is exercise in itself. If he’s not asleep he’s going, going, gone. So the constant up and down & lifting him up is good work for my arms and legs. We all know where the problem area is though, the stomach! We’ll hopefully see some good progress here in another fourteen days!
Slowcooker Rotisserie Chicken: Long story short: this was amazing and so, so easy to make! I have discovered how much I love the crock pot and how little I used it before this challenge. This here chicken is definitely a repeater! Also, please forgive me for the extremely poor photo! I had a hungry, working husband so I had to cut it up before I had a chance to take pictures. Anyways, you get the point even if it is a poor quality picture.
Chicken & Avocado Salad: This one was good and wasn’t good at the same time. For me, it was way too much avocado. I think seasoned the same way with just a half or a quarter of an avocado would have been much better for me. This’ll definitely be a repeater but we’ll modify the recipe and make it our own next time. Another good thing about this is that it is leftover chicken from the night before. Leftovers are key in making this challenge work for us!
Beef Tacos: These were something we came up with on our own. I definitely miss our little tortillas but, the lettuce leaves did the trick. If you can’t tell from the picture we just took two lettuce leaves, a little ground beef, top with some salsa, and voila! You have yourself a taco. Another leftover meal here, making this so much easier!
Easy Peasy Chicken Thighs: These are possibly the absolute best chicken thighs I’ve ever had. The outside is so crispy and the flavors all compliment each other incredibly well. Plus, the leftover chicken will make an awesome salad. You can thank me later…
Anything Rub: We used this rub on our rotisserie chicken and it was so flavorful. The cool thing about this recipe is that it makes a lot more than you need for just one meal. I’m excited to try it on more things in the future.
