So, this week, I had every intention of doing halloweennny or fallish inspired food…. but sometimes life just gets ya! Over the weekend I didn’t get to the store and life has just been plain busy. I know excuses, excuses! Anyways, I am one of those people who kind of tries to plan dinners ahead of time. The hub and I, we do it together.. Even when that is the case, we all have those weeks where it’s already hump day, you haven’t planned ahead, and you just don’t want to come home from work and cook something too involving. Enter this Southwest Chicken Salad. It is the easiest, quickest dinner meal and an added plus – its healthy too!
Grab Salad or Lettuce of your choice, Southwest Seasoned Chicken, Santa Fe Style Tortilla Strips, Mexican Style Cheese, and Salsa Ranch
To me salads have a tendency to be boring and be somewhat lacking in the flavor department. What I love most about this salad is that the seasoned chicken and salsa ranch give it the extra punch of flavor and keeps it interesting!

ps. – with this salad we always end up having some leftover, so I always add dressing in my individual serving rather than in the actual bowl of salad… why there’s no dressing in these images… That is probably a given, but thought I’d add what we do just in case.
