There’s something exquisite about the transition from summer to fall, especially here in southern California. As the days are still exceptionally warm, the evenings transform into a perfect, light breeze, 60ish degrees. Though the evenings are perfect, in my opinion, some afternoons we still need a refreshing pick me up to escape the high temps. Especially as a kid, one of my favorite summer treats was an orange creamsicle on a hot summer day. Thinking of these delights always makes me a little bit nostalgic remembering childhood and my mama providing such a simple indulgence on the perfect summer day.
This past weekend, while grocery shopping, I saw orange juice and became inspired to recreate the creamsicles in smoothie form. And lets be honest, a smoothie is a much more acceptable form for an adult to indulge on such a treat. I had an idea of what ingredients I would use that would provide a tart on the outside creamy on the inside taste, though it took a little bit of research and experimentation, I think I have finally found the perfect combination.
1 Cup Soy Milk 1. Pour all liquid ingredients into blender.
1 1/2 Cups Simply Orange with Mango 2. Add all solid ingredients.
1/2 Teaspoon Vanilla Extract 3. Blend on a low setting for 30 seconds.
Handful of Pineapple Chunks 4. Add Ice Cubes and blend until
1 1/2 Cups Vanilla Frozen Yogurt smooth.
Handful of Ice Cubes 5. Serve immediately and Enjoy!
