Out with the junk, in with the healthy. At this point we will have been eating a modified Whole30, probably on the stricter side of Paleo, diet for a little over two weeks. I have to say that I can always feel an almost immediate change in my energy level and mental attitude when I’m eating healthy consistently. But, why oh why, can’t ice cream give us the same long-term results. Well, I’ve finally accepted it. Healthy food works wonders, so really now, I need to be more committed to a life change rather than just doing something for a period of time and then reverting back to all of my old habits. Hi, I’m Hannah, I have a major sweet tooth + minimal self-control! All that being said, I’ve been really trying to eat more veggies. If you know me at all, then you know vegetables and I have a terrible relationship. Like vegetables are on the same level as a Monday, after a really busy Sunday, couldn’t sleep last night, got to wake up by 5am, and all the laundry still isn’t done. You see what I mean?! Not. Good.
Anyways, people, I’ve turned a new leaf and I’m really trying to prepare veggies in different ways to figure out what I can tolerate, or dare I say it, actually like. While this really is good for me, it’s something I want my son to pick up on and learn to like too! Hopefully it’ll make it easier to get my little cookie lover to tolerate some of the healthier stuff too!
As we continue on this journey for a second go ’round, I’ll share some of the meals and recipes we’ve been trying. I mean, thank goodness for Pinterest, right? How did we ever survive without it?
Here’s the Cauliflower Rice recipe I used!
